So you took a trip to the Farmer's Market and now you have a plethora of fresh, yummy fruit and berries. Here's one, simple suggestion from us for what to do with all that goodness!
What you need:
2 c. rhubarb, chopped
1 c. blueberries
1/3 c. honey
2 tbsp. chia seeds
What you do:
Heat fruits and honey in a medium saucepan until just boiling, then reduce heat to low and simmer for 10 minutes. Mash the fruits to desired texture, add chia seeds and let cool. Cover and refrigerate until set.
Put on toast, stir into yogurt, dollop on vanilla ice-cream.
