Recipe: Early Riser Chocolate + Rye Waffles

On Valentine’s Day, my mom used to make us crepes before school.  We never had them any other time of the year, just this day, and I will never forget it! The crepes were soft and warm and filled with ice cream and strawberries. 

This memory is a reminder that Valentine’s Day can be wonderfully simple and filled with small acts of love. Get outside your normal breakfast routine and make something special… like these chocolate rye muesli waffles. Added touch of sweetness: make them in a mini heart shaped waffle maker

Early Riser Rye Chocolate Waffles

3/4 cup Seven Sundays Early Riser muesli⁠
1/2 cup rye flour⁠
1 cup all purpose flour⁠
1/2 cup unsweetened cocoa powder
2 teaspoons baking powder⁠
2 large eggs⁠
1 3/4 cups dairy or plant milk⁠
1 teaspoon vanilla extract ⁠
2 tablespoons neutral oil⁠
1/4 cup plain yogurt

Sift the flour, salt, cocoa, and baking powder in a bowl. Make a well in the center and add the eggs, milk, vanilla, oil and yogurt and mix well with a whisk until blended and the batter is smooth. Fold in muesli - don't overmix. Allow the waffle iron or electric waffle maker to heat. Once heated, grease waffle maker and pour in just enough batter to fill the iron, then close. Cook for 2-3 minutes or until the waffles are ready. They should peel away from the top/bottom of the iron if cooked.

Top waffles with anything! Additional muesli, maple syrup, strawberries, powdered sugar, or yogurt. Enjoy!
