Squash + Cranberry Baked Muesli

12 oz bag of Classic Bircher Mix
1 can coconut milk
1 cup oat or almond milk 
1 cup fresh cranberries
1 cup butternut squash, cut into 1/2 inch cubes
1/4 cup toasted chopped walnuts
1/4 cup maple syrup
2 tbsp melted coconut oil + more for greasing the baking dish
1 tsp cinnamon
1 tsp vanilla
Turbinado sugar (optional for topping)

Preheat oven to 350. Mix all ingredients in large bowl and pour into a shallow oiled baking dish. Sprinkle with turbinado sugar if desired and bake for 30-35 minutes until the center is set and the edges have turned golden. Serve with a dollop of yogurt and a drizzle of maple syrup.
