Perfect Buttermilk Muesli Waffles (with Tart Plum Sauce)

Everyone needs a go-to recipe for fluffy, yummy waffles, especially after you've gone through the effort to find, dig out and dust off that waffle maker you should use more often. This is ours. 

First, get the sauce started. 

Tart Plum Sauce

1/4 c. coconut oil

1/4 c. honey

1 c. diced plums

1 c. sliced strawberries

Melt coconut oil and honey together in a small saucepan over medium heat. Add fruit and simmer while you make the waffles. 

Buttermilk Muesli Waffles

2 c. flour

1/2 t. baking soda

1 t. baking powder

1 t. salt

3 eggs

1/2 stick butter, melted, cooled

2 c. buttermilk

1 c. Original Cinnamon Currant Muesli

1/2 c. sliced strawberries

Whisk together the flour, soda, powder and salt. In another bowl, whisk together the eggs, butter. Turn on your waffle maker. Stir dry ingredients into wet ingredients until just combined. Let batter set for five minutes. Fold in muesli and berries.
