Gluten Free Midwest Farm Cakes
1/4 cup butter (plus more for pan)
2 cups buttermilk
2 cups Wildberry Maple muesli (or sub any oat-based muesli)
2 eggs
1/2 cup buckwheat flour
1 Tbsp sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
For topping, take your favorite jam (we used Trade Street Jam’s Strawberry Chipotle Fig), put about a half cup jam plus 1/4 cup water in a sauce pan and simmer for ~10 minutes. Let cool before using.
