Why We Love Them: When recalling our first muesli experience in New Zealand, the large pieces of toasted coconut stand out as perhaps the most memorable and unique ingredient. That is probably why it has made it into every one of our recipes since! There used to be a lot of negative hype about coconut because it contains high levels of saturated fat. People were concerned that it increased cholesterol and contributed to heart disease—but this is a myth. It actually lowers cholesterol and reduces the chances of heart disease. Easier to digest than meat and eggs, coconut is a great alternative plant protein source that is high in fiber, amino acids, iron, potassium and folate.
Sustainability Factors: Although the production of coconut has a lower life cycle environmental impact than most other crops, there are known harmful and unethical practices in the coconut industry. This is why we source organically and through trusted suppliers with fair trade certifications and have been socially conscious and more recently environmentally sustainable by actively supporting the local community with education and healthcare programs. It should be noted however that coconut is native to Asia so everything must be packed and shipped over long distances.
