Ice cream is happiness. I never turn it down. The words “Let’s go get ice cream!” are literally music to my ears. I finally purchased an ice cream maker last summer and it has changed my life. We make ice cream all the time now, throwing in whatever we have on hand – fresh berries, mint leaves, coconut milk, organic raw milk, toasted almonds, chocolate chunks, caramel swirls, and obviously muesli. I’ve made several variations with muesli – this is the winner.
Muesli in ice cream, you say? Let me explain…
In 2007, I had a love affair with a Ben & Jerry’s ice cream called Americone Dream. It is basically a vanilla ice cream with fudge covered waffle cone pieces. I could not get enough of that chocolaty chewy texture. This simple ingredient ice cream recipe delivers that same experience and so much more, but with super clean ingredients a lot less sugar. Breakfast for dessert anyone? How about dessert for breakfast :)
Rich Chocolate Muesli Ice Cream
1 ½ cup whole milk
¼ cup mascarpone
½ cup raw cane sugar
¼ cup cocoa powder
½ tsp pure vanilla powder (or vanilla extract)
1 cup Cocoa & Coconut muesli
¾ cup chocolate chips (I melted half and made a swirl)
In a large glass measuring cup or medium bowl, whisk together the milk, mascarpone, sugar, cocoa powder and vanilla. Pour into an ice cream maker and churn until frozen. Add the muesli and chocolate chips/swirl at the end. Freeze (or enjoy immediately).
