National Pecan Pie Day and Father's Day all in one week? We can't find an ounce of coincidence. There's nothing too fancy about pecan pie. It's the good stuff. It's comfort and happiness in baked form. It's equal parts nutty and sweet. It's foundationally strong, yet soft in the middle.
Sound familiar? Dads. They're sources of strength, and comfort, yet ideally squishy for hugs (shoutout to the #dadbod). They take humble pride in their roles. They ask for little, but give so much. They're not boastful and we seldom know their worries.
So today, let's celebrate Dads and pie with a slice (or two) of muesli pecan pie. He's earned it.

Recipe: Muesli Pecan Pie
Grab a big ol' bag of Seven Sundays Vanilla Cherry Pecan Muesli at your local Costco to prep for this oh-so-sweet recipe!
1 ¼ cups all-purpose flour
1 ½ tsp sugar
½ tsp salt
1 stick cold, unsalted butter chopped into little chunks
¼ cup cold water
1 ½ cups Vanilla Cherry Pecan muesli
¼ cup heavy cream
4 oz dark or bittersweet chocolate, chipped
½ cup light brown sugar
½ tsp salt
5 Tbsp melted butter
¾ cup pure maple syrup
¼ cup molasses
1 tsp vanilla extract
2 tsp apple cider vinegar
To prepare the crust
Combine the flour, salt, and sugar in a large bowl and stir briefly until the mixture is aerated. Using a pastry blender or your fingers, cut the butter into the dry ingredients until it is in pea-size pieces (appx. 4 to 5 minutes.) Drizzle in the cold water and mix just until the dough comes together. Shape the dough into a flat disk, cover it in plastic wrap, and refrigerate for at least 30 minutes.
To prepare the pie
While the crust is refrigerating, preheat the oven to 350°F. Beat eggs until frothy. Combine sugar and salt in a small bowl. Add in eggs and mix well. Add in heavy cream, melted butter, maple syrup, molasses, vanilla, and apple cider vinegar and stir to combine. Mix in the muesli and chocolate until combined. Pour into uncooked crust and sprinkle with a little extra muesli. Bake for 45 minutes or until center is done.
