Merry Muesli Muffins

Whether or not Santa is still a thing in your home, there is just something special about hanging out in pajamas with a cup of coffee, crinkled wrapping paper everywhere and the whole day ahead to play with toys or wear your new slippers around the house - this is where the best memories are made!

Santa came to our house a couple of days early this year since we are leaving for Peoria, IL to be with Brady’s family today. I put these muffins together so we’d have warm treats to eat while opening gifts, but secondarily so that we would have “road snacks” for our 7-hour drive (incidentally, Louis’ favorite part of road trip – “road snacks”).

These muffins are heavenly, festive, gluten free (if you use one of our gluten free mueslis), and nicely high in protein with the almond flour and Greek yogurt additions. So on the road or under the tree, their portability makes them a perfectly snackable treat for everyone this holiday season! Enjoy!

Recipe: Merry Muesli Muffins

Makes 16 muffins

  • 2 cups Original muesli
  • 1 cup almond flour
  • 1/3 cup brown sugar
  • ¾ tsp. baking soda
  • 2 eggs
  • 6 Tbsp. butter, melted
  • 1 cup plain Greek yogurt
  • 1 chopped banana
  • 1 cup cranberries
  • More muesli for topping

Preheat oven to 350ᵒ F. Mix dry ingredients together. In a separate bowl, whisk together eggs, butter and yogurt. Mix wet ingredients with dry and gently fold in the chopped banana and cranberries. Line muffin tins with paper cups and fill to the top. Sprinkle with extra muesli and bake for 20 minutes.
