It’s National Pumpkin Day! In the spirit, we’ve been experimenting with various muesli pumpkin breads and this one is the clear winner. The pumpkin is not overpowering (key – do not use a whole can!), nor is the sweetness (just ½ cup pure maple syrup). Of course, the melty dark chocolate inside does step it up a notch, but all the nutritious muesli, pumpkin and Greek yogurt evens it out and qualifies this as a proper breakfast in my book.
Recipe: Pumpkin (and Dark Chocolate) Muesli Bread
Preheat oven to 350 F and grease a loaf pan. Mix dry ingredients together with a fork or whisk. In a separate bowl, whisk together the pumpkin, yogurt, egg, coconut oil and maple syrup. Gently fold the wet ingredients in with the dry, then fold in the dark chocolate chips. Pour into your prepared pan. Top with more muesli, dark chocolate chips and some large grain sugar. Bake on the middle rack for 45-55 minutes.
