Bircher Muesli: The Perfect Summer Breakfast

We’ve had a lot of people ask us about our Bircher muesli lately. Different from our other Australian style toasted mueslis, our Bircher muesli is a “Swiss style” muesli that is completely untoasted and unsweetened. The wonderful thing about Bircher muesli is it can be prepared in a variety of ways and is also great to bake with (think hearty pancakes or chewy cookies!).

Today I am going to share the traditional way to prepare Bircher muesli – soaked overnight in milk. If you’ve never tried it, you MUST! Soaking Bircher muesli overnight produces a creamy, cool breakfast treat – like oatmeal, but chilled and therefore perfect for the summer – with chewy whole grains with just the right amount of crunch from the seeds and nuts. If you are feeling adventurous, try substituting orange juice for the milk – it gives the muesli an awesome citrusy flavor.

Recipe: Seven Sundays Bircher Muesli

Serves 2

• 1 cup Seven Sundays Bircher Muesli
• 1 cup milk of your choice
• ¼ cup vanilla yogurt
• ½ cup blueberries
• Drizzle of pure maple syrup

Pour the muesli into a bowl with the milk. Cover and refrigerate overnight. In the morning, give the muesli a good stir and divide into two small bowls. Top each with the vanilla yogurt, blueberries and a drizzle of pure maple syrup.

Soaking Bircher is easy and can save you time in the morning because it is ready to eat when you pull it out of the refrigerator. We’ve had parents tell us it is a blessing for their busy schedules because they can prepare it in the evening when the kids are in bed, saving precious minutes in the morning.
