Peanut Butter & Cocoa Muesli Truffles

You know that feeling when you discover something that is so simple and takes just minutes to prepare, yet the end product blows your mind? I had that feeling a lot when I purchased an ice cream maker. And now again that I’ve discovered these super simple truffle "bites".

Inspired by Sprouted Kitchen’s Almond Date Truffles and Green Kitchen Stories’ Chili Chocolate Truffles, I made these for a quick and easy dinner party the other day. The ingredients are pure and nutritious, but the flavor is so decadent you would have no idea they are completely void of added sugar, oil, dairy and gluten…seriously!

The truffles keep well in a jar in the fridge and one (maybe two) will take care of your sweet tooth spectacularly. No guilt.

Recipe: Peanut Butter & Cocoa Muesli Truffles

  • 15 dates
  • ¼ cup Cocoa & Coconut muesli
  • ¼ cup Peanut Butter (sugg. Wild Friends Chocolate Coconut)
  • 1 Tbsp. cocoa powder
  • ½ tsp. vanilla
  • Pinch of chili powder such as cayenne (optional, but highly recommended)

Blend all ingredients together in a food processor. Roll into balls (~1/2 inch), spread out onto a large plate or small baking pan covered with parchment. Refrigerate for 10 minutes and roll in shredded coconut or cocoa powder.
