One year ago, we had a crazy idea. We wanted to break out of the cereal aisle and bring our delicious muesli to people in a ready-to-eat “Bircher Bowl” format, with a cup of good coffee too. So we dreamed up a Muesliwagen, and the hard work began on transforming a charming 1985 Mercedes van, originally imported from Munich. How perfect for muesli?

As it turns out, our Bircher Bowls - muesli steeped in oat milk and topped with fruits and nut butters - are a MEGA hit! We are sharing the recipes for all the bowls on below so you can create them at home. My personal favorite is the Early Riser: Cocoa muesli, topped with maple tahini and bananas. Enjoy!

The Early Riser

1/2 cup Cocoa Almond Date muesli
1/2 cup oat milk (or sub any other type of milk)
1/2 ripe banana, sliced
Drizzle of maple cinnamon tahini sauce (we make ours in-house. Here is a great recipe to try!)
1 tsp cacao nibs
1/2 tsp toasted sesame seeds
Dash of sea salt

Soak muesli in oat milk from 1 hour to overnight in the fridge. When ready to eat, top with sliced banana, tahini, cacao nibs, sesame seeds and sea salt. 

The Crisp Morning

1/2 cup Bircher Apple Cinnamon muesli
1/2 cup oat milk (or sub any other type of milk)
1/4 cup shaved Granny Smith apple
1 tbsp rye bread crumbs (try this recipe to make your own with a loaf of rye!)
1 tbsp almond crumbles (blend almonds then toast crumbles on a baking sheet for a few minutes at 350)
Drizzle date syrup (we love Just Date Syrup!)

Soak muesli and shaved Granny Smith apple in oat milk from 1 hour to overnight in the fridge. When ready to eat, top with rye bread crumbs, almond crumbles, and a drizzle of date syrup.

The Wild & Free

1/2 cup Blueberry Chia Buckwheat muesli
1/2 cup oat milk (or sub any other type of milk)
1/4 cup fresh or frozen blueberries
1 tbsp almond butter
1 tbsp toasted coconut
Drizzle local honey
Dash cinnamon

Soak muesli and most of the blueberries in oat milk from 1 hour to overnight in the fridge. When ready to eat, top with additional blueberries, almond butter, coconut, honey, and cinnamon.
