Pumpkin & brown sugar soaked muesli: we like to think of it as pumpkin pie in your breakfast bowl. Not only are you creating an easy breakfast recipe with some of your favorite fall flavors, you are making a breakfast jam-packed with all the goodness of Bircher. With oats, rye, barley, nuts, seeds and dried fruit, our Bircher muesli is a nutritional powerhouse. Enjoy!
• 1 cup Bircher muesli
• 2/3 cup milk
• ¼ cup pumpkin puree
• 2 Tbsp brown sugar
• Lemon zest
• Cream and jam or apple butter for serving
Whisk together milk, pumpkin puree, brown sugar and a pinch of lemon zest. Pour over Bircher muesli. Cover and refrigerate for 30 minutes, or overnight. Serve with a splash of cream and a spoonful of jam or apple butter.
