Bircher Muesli + Soaking Grains

If you know us, you know we could talk for days about soaked muesli. When you find a breakfast that is perfect enough for every day because it tastes so darn good and the simple preparation creates a nutritional goldmine- it’s pretty tough to get it off your mind.

Soaking grains has been around since the beginning of time and let’s be real, our ancestors ate breakfast the way breakfast was intended: real food, communal table, and no rush.

The simple practice of soaking grains  allows the organisms and enzymes to break down within the grain and start to neutralize the phytic acid. Phytic acid, say what? Yeah, we hear you, we are not food scientists either. Phytic acid is found within the hulls of nuts, seeds, and grains (things that our muesli is chalk-full of) and is pretty tough for your body to digest when combined important minerals (like calcium, iron, and zinc) Yes, you heard us right, by soaking your muesli in a dairy milk, nut milk, yogurt (you get the idea, any liquid) you are helping your body not only absorb the nutrients in your breakfast bowl, but you are giving your digestive system a serious helping hand. 

Perfect summer breakfast? For sure.

Incredibly simple prep time? Nailed it. Go ahead, snooze that alarm.

Filling and out-of-this-world Delicious? Without a doubt.

Oh, and that whole part about the power of soaking grains? Life- changing (or digestion-changing, you choose)

The Seven Sundays Morning Routine: Soaked Muesli

Step 1: Bircher Muesli + Your Milk of Choice

If you like exact measurements, we suggest: 1/2 c Muesli + 1/3 c Milk (dairy or non), yogurt, or fruit juice.

If you are like us, go by feel. After a few days of soaking, you will start to figure out what your desired consistency is and you will be ready to ditch the measuring cup. #trustyourself

As far as the liquid goes- that is entirely up to you. A good whole milk is delightful, we love Cedar Summit Creamery‘s whole milk for all our local MN folks. If you have a raw juice bar that makes fresh nut milk , that’s a great combination. But really, whatever almond milk, coconut milk, or yogurt you have in your fridge- it will pair perfectly with your muesli.

Step 2: The Soaking Process

Once you add your desired liquid, let the muesli and milk do their thing. AKA enjoy your morning coffee. We think it’s best to have muesli soaking for 2 hours, or up to overnight. But on some rushed mornings, you will even notice that after only 20 minutes of muesli soaking in liquid, the grains start to soften up and the magic starts to happen.

Step 3: Top + Enjoy

After you have finished the soaking process, top with fresh fruit, your favorite yogurt, peanut butter, a drizzle of maple syrup, a sprinkle of toasted coconut…

You get the idea- the options are endless. The result, never gets old.
