It’s always nice to have a healthy snack on-hand. Especially one that can satisfy a sweet tooth. In lieu of reaching to something you’ll regret later, try making a batch of muesli bars with your favorite flavor.
Melt four tablespoons butter over low / medium heat. Add 1/4 cup honey and 1/8 cup brown sugar and whisk to combine. Pour liquid over 2 1/2 cups muesli and mix until evenly distributed. Spread over parchment paper and (using the back of a spoon or an additional sheet of parchment paper) press down gently until you’ve reached desired thickness. Here’s where you have a few choices, depending on what kind of bar you’re looking for.
If you’re craving something crunchy… bake in the oven at 350 degrees for 20 – 30 minutes. Be forewarned, though, that the mixture will thin out. It’s best to keep plenty of space on the exterior of your baking sheet. Cut into squares after the muesli mixture has cooled but before it’s too crisp to cut.
If you’re craving something chewy… allow the muesli mixture to cool completely before cutting it into snackable squares.
